Homestyle Southern Grits

ingredients

  • 1 cup stone ground grits
  • 4 cups water
  • 3/4 tsp. salt
  • 2 tbs. butter
  • 2 tbs. cream

directions

  1. Put 1 cup grits in deep saucepan. Fill with water, swirl, and then pour off the water.
  2. Repeat, pouring off the water removing the bran.
  3. Then add 4 cups of COLD water to the grits, 3/4 tsp. salt, 2 tbs. butter. and bring to a robust boil.
  4. Cover and simmer for 45 minutes, stirring occaisionally to prevent sticking.
  5. About 1 minute before serving, add 2 tbs. heavy cream to finish cooking.
